Embark on a sensory journey through the diverse world of sherry. This exclusive tasting menu showcases a curated selection from Fernando de Castilla, highlighting the remarkable versatility and depth of these Andalusian wines.
Begin with a refreshing White Vermut NV served alongside olives and peppers, before moving through elegant pairings that reveal the full spectrum of sherry styles, from the delicate finesse of Classic Fino and ‘La Yema’ Palomino, paired with yellow fin tuna tartare, tempura of tender stem broccoli and tiger prawns with chili salsa, to the rich complexity of Amontillado and Antique Oloroso paired with slow cooked pork belly, compressed baby gem and grilled fillet of Angus beef with wild mushroom.
The experience concludes with the indulgent sweetness of Pedro Ximénez paired with Peach Tart, meringue, mint crumble and sorbet.Expect an evening of discovery and flavour.
